Smoke profiles seem to depend largely on the quality of pellets used and then also on the burn consistency of the fire pot. What I mean here is that many pellet smoker users tell me that they prefer models that cycle over faster with frequent temp checks rather than those with longer wait times between temp checks. Cycling faster means that pellets burn more consistently and do not rest to a “charred” state and they “reactivate” This latter problem sometimes results in less than optimal flavor. Hey Charlie – I’d leave that grate wide open if you want maximum heat. If the grates are only over the burn pot, then you can do sort of a two zone cook (indirect vs direct heat) by putting a thicker steak, chop, or piece of chicken on the ‘non direct’ side to get up to a temp that’s 15 or 20 degrees lower than your target. Traeger Scout Known Defective Product Jul 30, 2018 New grill has extreme temperature fluctuations. Set T 350 gets as HOT as 548 and as COOL as 275. I spent a lot of time researching smokers before committing to the 640. I wanted something that can basically be left alone, produce good results and be durable. The 640 meets and exceeds those goals. It is built like a tank, and weighs about as much. I needed two people to help me assemble and move it. Assembly was straiightforward and took about 90 minutes. I have about 4 cooks on it and cannot be happier with the results.
I also was a certified KCBS judge but never judged at an event. Their judging system was flawed in my opinion because if you truly follow their system it is possible that them best tasting piece of meat might not win. In cutting horses (not a judge but read all the rules as I showed a fair amount back then) you were always supposed to judge the best overall horse to win. I asked about leaving a process to make sure the piece of meat you feel is best to win and was told absolutely not you have to judge presentation points, tender points & etc. and not place based on your opinion of the best piece of meat! Not that KCBS is a bad organization, it’s rules didn’t fit my thought process. Passed their class and got the t-shirt just never agreed, was always a spectator.

My wife and I purchased this over the weekend. Been wanting this grill for a while. $349.99 includes cookbook, 3 years warranty +costco visa warranty. While that just would be fine for regular smoking, this product needs some supervision and pellet refilling for longer smoking sessions. (We’ve been smoking a brisket and pork shoulders every week, with the occasional steak and veggies. So we’d like something that does both smoking and grilling, so both important, with the smoking component being the feature we’ll use a bit more of.)
When you’re buying a pellet smoker vs a wood smoker, what you’re buying is convenience and simplicity of use. We ended up going with the Memphis Pro. We were fortunate enough to be able to see all of the manufacturers and models I was most interested in, at Sam’s NW BBQ. (Yoder, MAK, Fast Eddy, GMG’s, a few others, and then, the one we ended up with, Memphis.) Sam took a good amount of time, providing us fantastic information about each model. We ended up with the Memphis Pro for the following reasons: 1) The construction, mainly the double-walled construction; 2) the preciseness of temperature, and being able to hold the temperature (due to reason #1); 3) the extreme ease of changing from smoking to grilling without a lot of effort or reconfiguration; 4) the double hoppers; 5) and another BIGGIE, the fact that grilled or baked foods taste like that, and not like smoked cookies, bread, pizza, etc.
So, we’re here to discuss the different cooking times and temperatures for different types of meat so that you don’t overcook or undercook your meal. But for the health concious, they should avoid certain meats. It’s worth noting that we’re here to discuss the temperatures needed for slow cooking and these should not be considered as universal standards for searing or grilling.
If you’re looking for a cheaper charcoal smoking experience, go for a charcoal or a bullet smoker. If you’re looking for everyday cooking, you’d be better off with a griddle or a gas smoker. But if you really want to get the best of all of them, dedicate your life to grilling of all sorts and if you are not afraid to spend a little more, then pellet smokers are definitely for you.

I have had a Traeger Junior Elite for 4 years. In that time I have used it < 50 times. I have replaced a fan motor, a fuse, and now I have been trying to get a thermometer replaced. First time, the service guy dropped the ball and never sent it. Second time- the thermometer got sent around to multiple post offices. Third time, never got to me- apparently they sent it to the wrong address. Fourth time- still waiting. It's been 5 weeks now, and I cannot get the part, and have no idea if the part will fix the grill. Everyone in service has been polite, but incompetent as well. To sear a steak you need direct radiant heat. I don't care if you can heat the air to 1000°F, it is still indirect heat and that does not deliver as much energy as direct radiant heat. It's physics, but not hard to understand. In short, heat is not the same as temperature. It feels hotter at 80°F if the sun is shining on you than if it is 80°F in the shade. Hey Boyd, it’s really great hearing from you here. I am becoming a much bigger Traeger fan then I was in the past. They have done some excellent work of late on their Grill models. I really think they’re doing a lot of work too improve and restate their original value proposition. I have several smokers I have used over the years. I have dialed in everyone I own over a course of trial and error. They all get great results, but require me to tend them all throughout the cook. I wanted a smoker that I could easily get to the desired temp, maintain the temp, provide good smoke flavor, and have the size to do a small or large cook, and not need me to be tending it throughout the cook. The learning curve on this smoker is super easy if you know all your temps, your first cook will give you the results your looking for. I was a little worried that I was not going to get the smoke flavor with a pellet smoker, but my brisket turned out amazing, very tender, the smoke ring was perfect. I spent months checking out Memphis, Fast Eddy, Mak, and Yoder grills. I must say the Yoder is by far the most robust pellet grill of them all. I noticed many reviews with 3 or 4 star ratings for price and I must disagree; fit, finish, build quality, and material robustness of the Yoder was better than the Memphis Pro & Elite...and we all know how expensive the Memphis is.

This is well worth the money. I'm a Weber charcoal guy for steaks and chicken and only used my old propane for baked potatoes, corn and asada. Fired this thing up and my asada was fast and easy to make. Philly cheesesteak was fast and simple. Large cooking surface lets you do a lot and it heats fast and evenly. Just make sure if you have kiddos around they keep their hands clear of the flat top! As of yet I haven't cooked on the grill grates so can't say anything about that. Putting this together was simple and took me about 20 minutes. On a side note one of the threaded tubes for a wheel broke loose when I put the wheel on and this was due to a very poor tack weld holding it. I contacted camp chef customer service and took a pic of the defective part and within 2 business days replacement part arrived. Excellent customer service. This thing will get a work out this summer! If your looking for a cover for this it can be a pain and I bought a patio furniture coffee table cover that is close to the grill demisions and it fits perfect.
For anyone thats thinking about getting this grill and this hung up on the price, you just need to take the plunge. And when you take it home you will realize it's worth every penny. And then after your first use, you will feel that you under payed. My first smoker grill was a green Mountain and there is just NO comparison on the market to the YS640. Grill grates and other add on's are amazing as well. LOOK NO FURTHER IF YOU WANT A GREAT GRILL/SMOKER/OVEN... ECT
I purchased a Traeger Lil Tex 22 yesterday. I “grilled” a whole chicken. It overshot the temperature by nearly a hundred degrees which wasn’t a bad way to crisp up the bird but I was afraid it was going to melt itself down so I shut it down. I was up by 5 this morning to smoke a pork butt for pulled pork sandwiches. My wife’s family is coming over for dinner tonight and time being a concern I fired up the “smoker”. It snowed 12 inches last night so the next hour I was shoveling my walks. Imagine my surprise when I checked on the Traeger and it had shut itself off . The meat was colt to the touch. I read through the instructions to make sure I started it up correctly and I did. I removed the meat and restarted the smoker. It smoked for awhile then quit. The temperature never got above 140. I called Traeger technical support twice and each rep gave me a different answer as to why it wasn’t working. After 3.5 hours I gave up on the Traeger for a more conventional method. I purchased the Traeger for the the set and walk away feature. It let me down!! It is 34 degrees outside today so I will wait until it warms up to try again. Should it fail me again I will sell it for scrap! So far I am not impressed. My wood smoker takes time but it is reliable.
