Their behavior is sometimes counterintuitive. The hotter they get, the less smoke they produce, and at their top settings, they don't produce much smoke at all. This is good for when you are baking cakes or pies or doing dishes that don't need smoke. But down under 250°F, they produce plenty of mild, elegant smoke. And even though the fuel is wood, it is hard to oversmoke with a pellet smoker. Burning wood on a charcoal grill produces much more intense smoke flavor.

****Update 12/2014: So I finally found something negative to report. Today I was cooking 2 pork butts and a brisket and discovered that this grill does not do well with wind on a brisk day (It was 45 degrees here today). When set at 250 degree, the smoker could barely make it up to 190 degrees. I was able to bypass the problem by throwing a cheap moving blanket over the grill (an $8 fix) but I think it's worth noting.

The Ortech has two knobs. The large one, the "Cook Control" has settings for: Off, Smoke, 180, 225, 250, 275, 300, 325, 350, 375, and High. One smoker manufacturer says that the "Smoke" setting is about 160°F and "high" is about 525°F, but both can vary due to ambient temperature, humidity, fuel type and quality of the smoker. Another knob, a teensy weensy knob to the right of the LED screen looks more like a push button. Labeled "SMOKE" and called the "Smoke Control Knob", it is meant to turn, not push, and it controls the pellet feed rate with auger on/off sequences indicated by "P settings". The P settings range from P0 to P15.

Regarding getting a good draft, this is a common misconception for pellet grills. The burn pot on pellet grills receives oxygen via a fan unit. As such, there’s no need for a draft to get a measured burn in the traditional sense. Most pellet grills lack sufficient insulation / gaskets, etc to prevent smoke from leaking out of the body. So, unless you’re going with the Memphis or something that uses oven style insulation, you don’t really need a chimney at all IMHO.
Camp Chef is the company that perfected the pellet grill formula that Traeger made up, hence its introduction of an effective pellet auger that dispenses pellets only when needed and a large capacity hopper that reduces the need for pellet refills (that people find really annoying). It’s economical in terms of fuel rationing even though the griller itself is quite expensive.

You have some solid reviews out there. I have been in pursuit of getting exactly what I want for about 25 years now LOL. Started with a Weber Kettle cooked some great meals on it and made that tasted more like eating a chunk of lump coal 🙁 Over the years I have built a couple 55 gal barrel smokers they were challenging to hold the temp, an old Kenmore stove oven into a propane starter wood smoke unit, a monster 24″ pipeline pipe 5′ long and a warming oven, a 40″ stainless grill made from an industrial engine catalyst that I could direct and indirect cook on and a few other small grills. Working in the oil & gas business and having poor welding skills with a good welding machine in the garage made for some great experiences. Most generally have cooked for 2 to 4 people but have fed up to 70 a time or two.
Purchased the YS640 about a month ago. So far I have cooked nine pork butts, three racks pork back ribs, one beef brisket and four thick cut New York steaks on it. I am very pleased with the results of these cooks. I have an upright propane smoker, Weber kettle, propane grill and so far the YS640 has out performed all three of those in ease of use and flavor performance. I can get almost the same flavors with my others, but takes more work and babysitting. Also want to mention that the YS640 is built to last. I noticed the ruggedness and excellent USA craftsmanship immediately upon arrival. Some reviewers think maybe the YS has a steep price, but I think its justified due to its construction and craftsmanship. It would be difficult to make something of this caliber for any less. A couple minor things to note is you will have to play with the damper a bit to learn the heat distribution, but after learning it, its not a problem. Doesn't put quite as strong as a wood flavor on the food as my upright propane smoker, but it puts the right amount and I have no complaint here. I would and have already recommended the YS640 to friends and acquaintances. If you have spent long hours smoking foods and know the correct flavors that they should be, your not going to be disappointed with this cooker!

It doesn't matter if you're talking about pellet grills, pop songs, or pizza, everyone always wants to know which is the best. I've had my ys640 for almost a year now. I absolutely love it! I debated for a long time before my purchase. I'm an old school charcoal guy at heart. I used to have a gas grill and a coal pit. Final Verdict: If you have the capability to cook on this full-time, then I recommend doing so. You will save your kitchen and house from excess grease and smell. It can cook most items relatively fast and easy once you get accustomed to cooking on a flat top. The only thing it can't do is cook sauces or bake items. I even recommend it to folks who don't eat typical greasy foods. This requires very little oil and can use all sorts of cooking oil. All of my food dishes have been cooked well and I constantly have people asking about this flat top. Clean up is a breeze and will save you from needing to clean skillets and pans. This is an essential cookware that every household should have.
Once you start paying more than $500, you’re looking at a big boy professional level machine. It’s going to be big enough that you don’t have to worry about having the neighbours over as well as the family. You’re also looking at more expensive sensors and thermostats, so you get a more consistent temperature, which leads to a much better end result, and there’s generally some sort of cleaning assist built in, which makes cleanup and putting it away at night so much easier.
PID: For the most precise temperature control, some pitmasters feel that a grill with a proportional-integrative-derivative (PID) controller is the way to go. A PID controller uses algorithms to keep the temperature within a couple of degrees of the setting. It doesn’t use fixed cycles to release the pellets. Instead, the controller only adds pellets when it’s necessary to maintain the desired temperature.

Pellets not Lighting: It’s a simple issue. There is a problem either with the connection of your lighting rod or a damaged system. Repairing the wiring, if that’s where the problem is, might be a little complicated for most. An attractive option for many people are stainless steel pellet grills, which are rust-resistant, more durable, and easier to maintain. While pellet grills made from commercial-grade 304 stainless steel are the most desirable, they come at a higher. However, there are also some pellet grills made from 430 stainless steel, which is more affordable and still incredibly durable.

As far as size goes, bigger is usually better when it comes to pellet grills. A large hopper means a longer time you can cook without needing to refill your fuel source. A bigger grill size means more room for a variety of meats or side dishes. Look for at least 700 sq inches of cooking space (that can include the upper rack as well – remember, pellet grills work like convection ovens.)
But even with their indirect heat, wood pellets do something gas can’t; they give your meat that natural, smoky flavor you expect from wood. They don’t create as much smoke as wood or charcoal, so the flavor is not as intense, you swap that intensity for convenient cooking. The smoke they do create is clean and easy to control. And the hotter you burn pellets, the cleaner they burn, letting you crank up the heat when you don’t need smoke.
Of course, we recommend our pellets and have proven them to work fantastically with all of our grills, but we would never be short-sighted enough to say that our owners must only use our pellets.  That just seems a bit, well, wrong.  From our testing and customer feedback, the following brands all worked very well:  B&B, BBQrs Delight, Cooking Pellets.com, Lumberjack and Smoke Ring.
