I have ate a few peoples cooking that have won at the Royal, Houston and Memphis in May. They have all had one thing in common, I didn’t put one drop of sauce on them and they had not been sauced on the Q before serving! The restaurant Cackle and Oink is just a ways from where we live and the owner Aaron Vogel is there regularly. I have tasted all his sauces and they are very good, but the 3 times I have been there, his sauces never touch my ribs and brisket! Aaron does say, if you like this you need to try my competition food (which I will at one of the competitions he is in locally). None of the KCBS, Houston or Memphis in may winners Q had even a hint of ash or bitter smoke flavor. They also had a very light smoke profile. They also all say they cook over well burned down wood.
Just like your kitchen oven, a pellet grill must keep a consistent temperature in order to produce great food. To get tender brisket, the temperature needs to stay as close as possible to 250°F for the entire 12-plus hours its cooking. JUNK!!!!! Major defects and powder coating coming off and possibly getting my family sick. Very rude customer service telling me to just take it back to Costco! Did I mention I bought the biggest one and will need to disassemble the entire thing to fit it in my explorer! I will be sending the paint chips that came off to a lab to determine what the stuff is and if my family has been exposed to carcinogenic chemicals. A $1,000 for Chinese junk....Stay away for your families sake!!!!!
For me, I don't care where it is built; it could be Oregon, China or the moon. But I want a smoker that is reliable. As a businessman, I don't understand this company. It is going to be a lot more expensive for the company when I return this thing to Costco and Costco makes Traeger take it back. Just being responsive and sending a new controller under warranty would seem to be easier and cheaper. 2. The grill does not come back to the set temperature after the lid is opened and closed to place the meat. I start it, close the lid, set the temp (startup procedure has changed to this according to Traeger service tech) and after 15 or 20 minutes it is not at the set temp yet...in fact it is declining. Well I need to cook on it and cannot wait forever so I open the lid quickly, throw the meat on, and close the lid quickly.
Although pellet smokers already have their own custom-made wood pellets with different flavor and blends, if you choose to moonlight your smoker as a charcoal smoker for some reason (maybe for a different experience or a cooking experiment), you can use it as a regular smoker using wood chips. Hey Ben – thank you for your comment. From a retail user standpoint, I think you’d be happy with either a Yoder or FEC. I really like the PG 500 for the purpose that you’re looking at. Best of both worlds it seems the more I’m looking at it. You can see how they approach grilling steaks in this video. You can incorporate the use of GrillGrates in either pellet grill. Both companies make their units in the USA. Both have great reputations. I’m just partial to Cookshack’s pellet smokers over Yoder as I know more folks who use them.
When it comes to construction, few companies can beat Traeger. Its grills come with construction features like cast-iron grates with a clear and nontoxic coating that prevents food from sticking to the grill and fireboxes made from a similar material. Though Pit Boss grills feature similar elements, many look flimsy, and most will not keep up with your grilling and smoking demands.
This smoker is one totally awesome product. It is more that just a smoker, it is a true convection oven, we have baked bread in it! As for being able to hold the temp for low and slow, wonderful. The beef that I smoked was delectable. I just this week smoked 10 venison loins at the same time; it took 1 hour for the most tender, delicious venison I have ever tasted!

This is well worth the money. I'm a Weber charcoal guy for steaks and chicken and only used my old propane for baked potatoes, corn and asada. Fired this thing up and my asada was fast and easy to make. Philly cheesesteak was fast and simple. Large cooking surface lets you do a lot and it heats fast and evenly. Just make sure if you have kiddos around they keep their hands clear of the flat top! As of yet I haven't cooked on the grill grates so can't say anything about that. Putting this together was simple and took me about 20 minutes. On a side note one of the threaded tubes for a wheel broke loose when I put the wheel on and this was due to a very poor tack weld holding it. I contacted camp chef customer service and took a pic of the defective part and within 2 business days replacement part arrived. Excellent customer service. This thing will get a work out this summer! If your looking for a cover for this it can be a pain and I bought a patio furniture coffee table cover that is close to the grill demisions and it fits perfect.
